Salsa Chicken Burrito Bowls

This weekend, we had friends over to watch the NFL playoff games that were on Saturday night. Although there was only going to be four of us for dinner, I didn’t want to spend an hour or more in the kitchen preparing something when I could be spending time with friends. So I went with my go-to dinner for when we have company: Salsa Chicken Burrito Bowls.

This is the easiest thing to make (not exaggerating!). All it takes is chicken breasts, lots of salsa, and a slow cooker. You combine everything in the slow cooker, turn it on high and basically ignore it for the rest of the afternoon. Make some rice on the side for the base of the burrito bowl, buy all the fixings and set up a buffet station for everyone to make their own. I actually set up all the toppings before everyone even came over so that when we were ready to eat, all I had to do was to take everything out of the refrigerator five minutes before we were ready to eat.

Salsa Chicken Burrito Bowls

Serves 4-6 (hungry) people

3 lbs. boneless chicken breasts

2 large jars of salsa (chunky salsa works best)

6 cups (makes 12 cups cooked) raw brown jasmine rice

Optional toppings: (this is what we usually use)

Pinto beans

Black beans


Shredded mexican cheese

Shredded pepper jack cheese

Fresh corn salsa

Sour cream

Take the chicken breasts out of the package and place in the slow cooker. Add both jars of salsa, and make sure the salsa is evenly covering the chicken. Turn the slow cooker on high for four hours [and go enjoy the game and some beers]. After four hours, put the rice on to cook (see package for rice cooking directions). While the rice is cooking, shred the chicken in the slow cooker using two forks, pulling the chicken apart until it’s all shredded. Turn slow cooker on to low, and continue cooking the chicken until the rice is ready. Once everything is done, put the chicken and rice in serving bowls, put out all your toppings, and make your own burrito bowls for an easy, fun, fan favorite dinner!
